First take a package of low sodium bacon and saute until brown. Set bacon aside but leave the grease in the pan.
Next add some finely chopped carrots, celery and red onion to the bacon fat. Saute.
Now add some fresh herbs. I added some Rosemary, Thyme, Basil and Oregano. This is the time to season with Salt and Pepper too.
Now chop up a handful of fresh Garlic and add it to the pan...saute until all the veggies are al dente. Set aside.
In a large dutch oven add about a pound each of Ground Turkey, Pork and Beef. Add a dash of Olive oil, season with Salt and Pepper and brown on Medium high heat stirring constantly.
Once browned add the cooked bacon
and now pour in about half a bottle of red wine. I always choose a red wine that I enjoy drinking. In this case I purchased a nice bottle of Italian red wine and drank the rest while the sauce simmered!
now add in 1 can tomato paste and 1 large can crushed tomatos.
add all the veggies back in to join the meat party!
Stir until combined, cover and simmer on low for about 1 hour.
After about an hour of simmering stick a bunch of chicken drumsticks into the sauce. Cover again and simmer for 2 more hours.
after the two hours are up, remove the drumsticks from the sauce and start chopping up the chicken meat. (I made my mom do this part..lol!) Discard the bones and skins.
Add the chopped chicken back to the sauce and simmer for another hour or so. Tasting the sauce for seasoning.
Looks like the sauce is ready!
